Colorado Proud March Recipe Features Millet

Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. Colorado Department of Agriculture Marketing Specialist Wendy White shares more about this month's featured commodity

White: "March we are featuring millet and Colorado is actually the number one millet producing state in the nation. We have about 260,000 acres harvested every year, producing more 8 million bushels. It's a big crop for the state and we're a leader in the nation."

If you aren't as familiar with millet as a crop, White continues

White: "It's commonly most found in bird seed blends, which how is most people find it. But because it is a gluten-free grain, we're seeing it become more popular for recipes for home cooks and restaurants. This month's recipe is a great way to introduce yourself to millet with a grilled vegetable and millet salad."

And if you are looking for a great Colorado wine to go with this special meal — try a Cabernet Sauvignon from Whitewater Hill Vineyards in Grand Junctions.

White says for those ag producers still considering whether they want to be listed in the upcoming directory — there is still time.

White: "Well, the Colorado Department of Agriculture is still accepting listings for the Annual Farm Fresh Directory which lists farmers markets, roadside stands, u-picks, agritourism activities. If there are producers interested in listing in that publication, they can visit coloradoagriculture.com"

The deadline for the sign-up to be included in that directory has been extended to March 10th.
