Colorado Department of Agriculture ‘s Colorado Proud division is highlighting the perfect deviled eggs in October.

“Fall is here and October is here. And we’re celebrating World Egg Day on October 11th. That is a great day to enjoy Colorado eggs. We have over 4 and a half million laying hens all over the state producing over a billion eggs every year. Egg is one of the top ten agricultural commodities in Colorado.”

Wendy White with the Colorado Proud program says the recipe this month is a twist on a traditional favorite.

“Our Smoke Deviled Eggs recipe really focuses on those Colorado eggs and has a nice twist of flavor with the smokiness that you get from putting the hard boiled eggs in the smoker and adding a little BBQ seasoning and BBQ sauce as well as some of those Pueblo chiles to mix of the yolks for those deviled eggs.”
