Food and Grocery Store Trends to Be Aware of

Supermarket Guru Phil Lambert shares some key trends in retail consumption for livestock producers to pay attention to. The first is that the retail environment is changing — supermarkets are becoming smaller.

Lambert: "That means smaller meat cases. So what we're going to see is we're going to see a lot of retailers curating what their offerings are — so it isn't going to be a 20 to 30 foot meat case anymore. So the producer has to get into the stores and has to see what is going on there number one. Number two — really being attuned to what consumers are looking for. We know that producers love protein. No question about it — everything that slaps protein on a label increases the sales. So really honing that message — this isn't protein that something that has been added to it — this is real protein from the get-go. So those are the two areas are probably the most significant things for the producers to understand and see for themselves."

He continues with another important trend

Lambert: "People — especially lead by the Millennials and Generation Z — want total transparency. They want to know where their food is coming from. They want to know where their bacon is coming from. They want to meet that farmer. They want to be able to look at the farm practices that are taking place out there. And they want to have a relationship with that farmer — doesn't mean going to the farm - but being able to see who they are, what they stand for, whether there are like values between how that farmer lives his life and how they operate and how that consumer lives their life."
