It’s November and the produce item highlighted by the Colorado Proud state program this month is a perfect addition to your Thanksgiving menu.

Wendy White at the Colorado Department of Agriculture tells Colorado Ag Today that while Washington boasts its Walla Walla sweets and Georgia has its Vidalias, Colorado’s locally grown onions cover the spectrum.

“We don’t grow any specific kinds of onions but we do produce a wide variety of onions. Colorado grows white, yellow, red, as well as the sweet varieties and some specialty varieties. And Colorado is actually quite well known for its onion production. We’re top ten nationally for onion production producing over 166 million pounds on 3500 harvested acres. Primarily in northeastern Colorado.

The recipe is a sausage and cornbread stuffing, It has a great mix of vegetables including onions, carrots and celery as well as some dried fruit so really a great side dish for your Thanksgiving feast.”
