Concept of Food to Body Rather than Food to Table

Most of us have heard the term farm to table or gate to plate when discussing farmers and ranchers' ag products that find their way to consumers' homes and tables. However, University of Idaho Associate Professor and Registered Dietitian Dr. Samantha Ramsay has a different perspective that she shares with farmers about their products for consumers.

Ramsay: "I like to think of it as farm to body because really our growers what they are doing is producing foods that is ultimately consumed by people and affecting and supporting their well-being and their health. I think that is really the wonderful recognition that needs to be out there — is the work that they do to support really the health of the world. That is essentially what is going on. I think we are so fortunate in our food environment that we don't see the connection so easily because we have so much available but I really like to bring that farm to body concept to attention."

Ramsay: "The reality is that whole grains are an incredible nutrient dense source of food and provide an immense amount nutrients — especially for children for growth and development. So I really try to advocate that we want to see the value of the nutritional quality of whole grains and wheat in particular. Especially when we are focusing on consumption whole grains —like whole wheat — then we are maximizing the nutritional intake of the population and that is what we should really try to emphasize."
